How to make arroz caldo recipe (chicken rice soup or chicken congee)




this is my family’s favorite soup during rainy days back in the Philippines, i cooked it early in the morning to make sure that my kids will have a fresh “arroz caldo” as their breakfast. We often eat it with pan de sal (filipino bun) and or with puto (rice cake).

Now, my daughter still ask me to make this specially winter mornings we’ll have a bowl and a cup of fresh brewed coffee and just enjoy the morning together.
anyway, this is a very simple dish and you can even make it before bed time just live it on your slow cooker or rice cooker and enjoy it the next day.

servings: 3

ingredients:
1/2 cup uncooked rice
3 cups water (or 3 cups chicken stock)
1/2 tbsp atsuete (annatto) soaked in 3 tbsp luke warm water (squeeze it after soaking to have the fullest color if desired)  OR  annatto powder
2 tbsp minced garlic (we liked it garlicky but if you are not a fan of it just make it 1 tbsp)
2 tbsp finely chopped onion
2 tbsp finely chopped ginger
1 chicken bullion cube (if using water)
9 chicken wings or 3 chicken legs
3 hard boiled egg – peeled (optional)
salt or patis (fish sauce) and pepper to taste
canola oil for sauteing (3 tbsp or more depends on how much garlic or onion or ginger you want)
lemon or calamansi wedges (optional)

procedures:
1. heat oil. add garlic and saute till light brown.
2. add onion, saute till transparent.
3. add ginger and saute till the aroma fill your kitchen.
4. add the chicken wings/legs and saute till the juice run clear or till light brown.
5. add the chicken bullion (skip if using stock) and rice – saute for about 3-5 minutes.
6. add the water or chicken stock and atsuete (annatto) juice – simmer for at least 30 minutes (more if you want it thicker).
7. add salt/patis and pepper to taste.
8. serve hot with boiled egg and calamansi/lemon wedges on the side.

note:
if you will be using slow cooker or rice cooker, follow the steps from 1-5 using a separate pan and then transfer following the rest of the procedure.
