another sleepless night

here's to another sleepless night, i think it is becoming a common thing now that i am not getting any sleep at all coz my husband is sick (he have flu and bad coughing lately) im afraid that i sleep so hard that i wont be able to hear him when he needs my assistance.
luckily i am merging to this new blog and im being productive despite my feeling of wanting to just lay down and fall asleep. usually if i cant sleep i just start preparing food or bake but tonight i am not in the mood of doing any of that other than just sit here in bed and type then read then type LOL
hopefully my next week will be much better and my whole family wont be sick anymore, i still need to get up early to prepare my hubby's stuff for work then drive my 3yo son to our local library to participate to the story telling.
i know i am not making any sense right now but it is great to be able to just express what comes in my mind and not worry about feeling wrong or be judge by others.
hopefully your day/night is better than mine.

How to make creamy leche flan recipe



Most filipinos love this dessert and we do too. my daughter always ask me to make this every other month. the second time i come to visit her and her family she ask me to bring “llanera” (aluminum molding pan) to her so she can have an authentic looking leche flan she told me that they tried to look for it on asian market but cant find it so i brought some and that made her happy.


this filipino dessert (mexicans have their version too – “flan”) is very easy to make just follow my simple direction and you will have a tasty and creamy leche flan.



enjoy!



ingredients:
15 egg yolks
1 can condensed milk
1 can evaporated milk
1/4 cup plus 5 Tbsp sugar (you can add some more depending on your taste)
5 llanera (you can use a 5 mini loaf pans OR 3 8 x 3 7/8 x 2 15/32″ loaf pans OR 8 small ramekin bowls)
steamer



directions:
1. place water in your steamer and wait till it boils.

2. while waiting for your water to boil sprinkle a tablespoon of sugar in each pan and place it in your oven toaster under toaster setting and let it melt but dont burn – set aside and let cool.
3. mix all the left ingredients in a bowl and pour to the pan about 3/4 inch each (or just balance the amount on each pan) cover the top with aluminum foil make sure it is tight to avoid the water vapor goes inside.
4. once your water is boiling place the covered pans in your steamer – lower the heat, simmer for an hour.
5. let cool (we usually place the llanera(pan) inside the fridge till we are ready to eat it)


How to make arroz caldo recipe (chicken rice soup or chicken congee)




this is my family’s favorite soup during rainy days back in the Philippines, i cooked it early in the morning to make sure that my kids will have a fresh “arroz caldo” as their breakfast. We often eat it with pan de sal (filipino bun) and or with puto (rice cake).

Now, my daughter still ask me to make this specially winter mornings we’ll have a bowl and a cup of fresh brewed coffee and just enjoy the morning together.
anyway, this is a very simple dish and you can even make it before bed time just live it on your slow cooker or rice cooker and enjoy it the next day.

servings: 3

ingredients:
1/2 cup uncooked rice
3 cups water (or 3 cups chicken stock)
1/2 tbsp atsuete (annatto) soaked in 3 tbsp luke warm water (squeeze it after soaking to have the fullest color if desired)  OR  annatto powder
2 tbsp minced garlic (we liked it garlicky but if you are not a fan of it just make it 1 tbsp)
2 tbsp finely chopped onion
2 tbsp finely chopped ginger
1 chicken bullion cube (if using water)
9 chicken wings or 3 chicken legs
3 hard boiled egg – peeled (optional)
salt or patis (fish sauce) and pepper to taste
canola oil for sauteing (3 tbsp or more depends on how much garlic or onion or ginger you want)
lemon or calamansi wedges (optional)

procedures:
1. heat oil. add garlic and saute till light brown.
2. add onion, saute till transparent.
3. add ginger and saute till the aroma fill your kitchen.
4. add the chicken wings/legs and saute till the juice run clear or till light brown.
5. add the chicken bullion (skip if using stock) and rice – saute for about 3-5 minutes.
6. add the water or chicken stock and atsuete (annatto) juice – simmer for at least 30 minutes (more if you want it thicker).
7. add salt/patis and pepper to taste.
8. serve hot with boiled egg and calamansi/lemon wedges on the side.

note:
if you will be using slow cooker or rice cooker, follow the steps from 1-5 using a separate pan and then transfer following the rest of the procedure.

RECIPE How to make rellenong bangus (stuffed fried milk fish)



This is the first time i made this meal abroad because it is not easy to find fresh bangus (milk fish) in any market here even in asian market, luckily there is one that have it every weekend we just have to drive at least 50 minutes to get there – it’s worth it though!
We tried to buy the frozen rellenong bangus we find but it is not as tasty as we are used to my daughter complains about it so here i am making one for her.
You can see this dish whenever there is a special occasion like fiesta, wedding, baptismal, etc.
it takes a lot of work so i dont like to make this every time, once in a while is ok specially if we are craving for it.
Hope you enjoy it as much as we did!

ingredients:
1 medium size bangus (milk fish) this one is 1.4 lbs.
1/4 cup ground beef or pork
1.5 tbsp minced garlic
3 tbsp finely chopped onion
3 tbsp finely chopped carrot
3 tbsp finely chopped potatoes
3 tbsp finely chopped red or green bell pepper
3 tbsp raisin
salt and pepper to taste
1 egg (beaten)
1 tbsp corn starch or flour
2 tbsp canola oil for sauteing
cooking oil for frying
needle and thread or aluminum foil (we use needle and thread but some likes to use the aluminum foil)
3 tbsp low sodium soy sauce + 2 tbsp calamansi or lemon juice for marinate (optional)

procedures:
1. scrape fish scales clean (you can have it done at the market)
2. gently pound fish using the end of your knife to loosen meat from skin.
3. break the big bone at the nape and tail.
4. insert the end of handle of a knife through the fish neck and gently roll around separating the skin from the skin down to the tail .
5. remove the handle, squeeze and push out meat with the big bone, starting from the tail going out through the head – this way you will be able to push out the whole meat without cutting and opening the length of the skin.
6. marinate the skin and head of fish for about 5 minutes or till the stuffing is cooked.
7. boil the fish meat in a little water about 5 minutes, drain and cool.
8. remove the bones as you flake it, set aside.
9. saute garlic in 2 tbsp canola oil till light brown, add onion saute till transparent then add the ground meat – saute till the meat looks cook about 3 minutes in medium heat stir in fish meat.
10. add carrots and potatoes seasoned with salt and pepper to taste – cooked for about 5 minutes.
11. add raisins and beaten egg mix for about 1 minute, turn off the heat and sprinkle the corn starch or flour, mix – let cool.
12. preheat frying oil at 355 F.
13. pat dry the fish skin and head using tissue paper if you decided to marinate it.
14. stuffed the skin with the cooked meat on the fish head making sure that the head is not separating from its body. if you decided to stuffed it on the side of the fish used the needle and thread to saw it back together or wrapped it with aluminum foil.
15. fry for 5 minutes or until golden brown.
16. sliced and served it with tomato ketchup or banana ketchup or atsara (pickled unripe papaya)


how to make pandesal (filipino bun) at home - recipe



pandesal is the one bread almost all filipino love to eat at breakfast, you can have it bland, salty or sweet depends on your taste.

this bread brings back a lot of memories of being a kid, growing up and having a family of my own. i like to eat it as it is or dip it on my coffee or with scrambled egg.
now that we are living abroad, this kind of bread is not easy to find and your best way of having it is if you make it on your own.

my daughter and i have tried a lot of sites to find the best recipe for pandesal but nothing really comes close to what we really like so after a lot of trial and error we end up with this authentic pandesal taste recipe.

it is very easy to make and you can make it at night time and just bake it in the morning or bake it the same time and just freeze it – this is what we usually do, bake it at night time and freeze it and just microwave it to defrost and reheat at the same time.
the taste is still good and it wont be hard like most bread you leave outside your counter.

servings:
28 medium size pandesal

ingredients:
2 cups warm water
2 teaspoon active dry yeast
1/3 cup + 1 tsp white sugar (make it less if you dont like it sweet or add some more if you like it sweeter)
1/4 cup canola oil (vegetable oil)
1/2 tsp salt
5 cups all purpose flour

procedures
(using a stand mixer) if not still follow the procedures just make sure that the consistency of the dough is elastic and still a bit sticky in your hand:

1. place the warm water on the mixing bowl, sprinkle the yeast and 1 tsp sugar. let stand for 5 minutes or until creamy – not more than 10 minutes if it did not turn creamy it means your water is not warm enough or your yeast is already dead, throw it and do it again.
2. add remaining sugar, canola (vegetable) oil and salt, mix for about 30 seconds.
3. add 1 cup of flour and mix until flour is dissolved. do this 1/2 cup at a time until the 5 cups all purpose flour is gone.
4. knead for 2.5 minutes using the no.2 set of your stand mixer or according to your mixer manual for bread dough (if using hand knead it until it becomes elastic and smooth.
5. oil the same mixing bowl you use and roll your knead dough, cover for at least 45 minutes or until double in size.
6. punch the dough and divide into 4 equal parts, turn onto a lightly floured surface and roll.
7. sprinkle the surface with bread crumbs and roll each again until it forms a cylinder, roll till the log is 1/2 inch in diameter.
8. place it on your baking pan/sheet and cut lengthwise 5 times, do the same for the 3 other log.
10. let it stand for about 15-30 minutes (until it double it size), make sure that 5 minutes before it fully reach it doubled size you are preheating your oven.
11. preheat oven to 375 degrees F (190 degrees C).
12. bake at 375 degrees F (190 degrees C) until golden brown, 15-20+ minutes. I like it a bit toasted so i add a few more minutes to it 23 minutes in total. my daughter likes it very soft and light colored so i bake it for 15 minutes for her. just check your bread once in a while until it reach your desired doneness)


How to make siopao - asado flavor recipe (filipino steam bun)


i have always love this food, i consider this as my ultimate snack beside cake :)
my daughters knows how much i enjoy this so when they were in highschool and college they will always bring this to me as their “pasalubong”.

every once in a while i do crave for this food so we buy some at the asian market but being so expensive ($9-12) and some is not that great i decided to look up the recipe of it and just do it on my own and i can have it anytime i want and i dont have to worry about preservatives and the price as well.
you can make the filling ahead and just refrigerate it and just do the dough whenever you have time (not more than 3 days). whatever leftover siopao i will just freeze it and defrost it as i need it.

for the filling:

ingredients:

1.5 lbs pork or chicken or beef or lamb (we uses beef in this one)
3 tbsp extra virgin oil (or canola oil) for sauteeing
2 tbsp minced garlic
1 cup diced onion
pepper to taste
3 tbsp soy sauce
3 tbsp hoisin sauce
2 tbsp oyster sauce (preferably lee kum kee)
4 tbsp brown sugar
1 1/2 tbsp corn starch or all purpose flour
1/2 cup water

procedures:

1. heat the extra virgin oil (canola oil) and sautee garlic till light brown, add onion and sautee till the onion becomes transparent.
2. add the meat and sautee for 5 minutes, add the pepper (to taste, this one i uses 1/2 tsp) and simmer for 5 minutes uncovered.
3. dissolve the corn starch (flour) to 1/2 cup water set aside.
4. add the remaining ingredients, mix and simmer (covered) in low heat for 30 minutes or until the meat is tender.
5. mix the dissolved corn starch and simmer for another 5 minutes or until a bit thick. let cool for about 1 hour or over night in the fridge. (make the dough while waiting for the filling to cool down, this will give enough time for the dough to rise at the same time. make the dough the next day if you are keeping the filling over night).

for the dough:

1. boil water on your steamer
2. roll the dough 6 inches wide circle.
3. place 1 tbsp filling in the midle and pull edges of the dough and twist it firmly.
4. place wax paper underneath before you put it on your steamer.
5. repeat the process till you finish the 12 siopao.
6. steam for an hour.
7. serve hot or freeze it

note:
*to reheat using microwave, defrost it using bread setting and use 1 lb as a weight for each siopao, it will be nice and not dry if you use this kind of setting.
*if using a normal method. defrost it first and steam for minutes.
*if using rice cooker (steam setting) there is no need to defrost, just place the frozen siopao and press the steam setting.

how to save some money…


how to save some money???

that’s often the question now in our mind-  with all the expenses, low income, lost job and other factors that affects our financial status this one is a big question we all want to know the answer or at least some of the answer.

most site now offer ways on how to live simple and frugal  without giving up simple pleasure in life, definitely not easy to do but if you really want it i feel there is always a way ti make it happen.
this is just the few things we do at home to help save some money.

1. remove cable tv subscription
paying $45 per month (used to be $65 because of prime channels which we rarely watch)  is too much for something we only used when we want to watch news or something that interest us., imagine paying that much plus the electricity for your tv and cable box – guess by doing so you can save at least $60 per month.
i ordered us an indoor antenna ($41) hope it will work well – base on the reviews it is pretty good giving them at least 12 HD Channels so that’s all we need. $41 is still cheaper than paying the monthly cable subscription of $45 and that is only one time payment – you can’t beat that!
btw, if you like to follow shows on big tv networks you can always watch them on hulu, or the network’s website or sidereel or tv.com or just google it and it will give you bunch of options to choose from. if you like to watch movies you can also do the same online or subscribe to netflix, if not a fan of subscription and you live near the city or shop that have those $1 movie rent machine (good for 1 night) then that would be your best bet at least you can always watch how much you are spending each time.

2. downgrade your internet subscription
we used to have the booster plan ($75) in road runner but after having a lot of problems and back and forth complains we decided to just ditch the high paying subscription and just stick with the standard one ($35).
if you dont do a lot of downloading at home and just use your connection for normal ways then downgrading is right for you – that’s $40 savings a month just by doing so!

3. use washing machine, dryer, ironing, vacuum and any other high usage electricity at night time or early in the morning only
i always practice this one because it helps us to save a little bit of electricity each time., lately i am no longer using our dryer (i just hang it outside – sun is my free dryer) some clothes i dont even iron now so that saves me time and money.

4. lower your air and water thermostat
we used to set our air thermostat at 72 at day time and 73 at night time but after seeing our last month’s bill of $365 (we have family that came for a visit) i told my family that we are setting it at 78 day and night and just have our ceiliing fan on, so far so good – we realized we will still survive even with that inside temperature :)
im anxious to see this month’s bill and see how much we save…

5. stop using your dishwasher
yeah i know some will say “NO” but if your dishwasher is as bad as ours (even after the label says it is energy saving dishwasher) then you are better off not using it at all.
ours run 2 1/2 hours each load and that is already for normal loads (crazy ei?) and we used our dishwasher at least 3x a week, imagine how long that takes, dont know how much electricity it takes but 2.5 hours is good enough reason to stop using it.

6. clip coupons
some says it is just a waste of time but believe me IT IS NOT,,, there are times i go shop and get our stuff for almost free, it is also a big help if you have a baby or few kids at home. diapers are expensive in my opinion but if i can cut it at least half then i am very happy about it. i belong to BJs and Costco but we often shop at BJs because i can use their coupon together with manufacturer’s coupon, i can usually cut our monthly shopping expenses into half just by clipping coupons so just do it as much as you can.

7. buy only what you NEED
i have been telling that to myself (a lot!) specially whenever we go to malls and i can see those tempting “sale” signs :) , i find it very helpful to go inside the shop and look around and not buy and go out and think about it after a day – if its really that important then go back but if not you can just erase the thought of it.
this goes to buying groceries as well, even if you have coupon or there are a lot of sale sign on the store dont get fooled by it because it will often be wasted specially on produce products – this often leads t throwing the products in the end.
some products are worth buying a lot if they are on sale and with a coupon like laundry detergent or tissues and some products that has expiration date of at least 3 years from now, i find it interesting that most sale products they are leaving in the shelves are either a few months away from being expired or about a week to be expired – so be VERY VERY CAREFUL on checking the expiration dates of the products you are buying, this will help you not to panic buy on stuff you dont really need.
